Almond Peanut Chocolate Protein Balls

ingredients

½ cup pumpkin seeds (pepitas) plus extra for coating

½ cup sunflower seeds

1 cup almonds

12 medjool dates

4 tablespoons crunch peanut butter (organic)

3 tablespoons raw cacao powder

½ cup organic coconut oil

1 cup desiccated coconut

 

method

These easy to make chocolate balls are full of protein, fibre, good fats, magnesium, iron, potassium, calcium, selenium, Vitamin B6 and zinc.  Pepitas and sunflower seeds provide blood glucose regulation, hormonal synthesis and aid in liver detoxification. Super easy and a terrific post work out munch.  

In a food processor place the nuts & seeds, blitz until they are fine and crumbly. Then add all other ingredients and blitz until you have a crumble that sticks together. You may need to stop and scrap edges for all ingredients to combine properly. Then scoop mixture into a bowl and roll into bite sized balls. Coat the balls in extra coconut or some finely processed pepita seeds. Place on a tray and refrigerate, once set store in a large jar. These will keep for  3-4 weeks in the fridge – if they last that long :-).
