Holy Guacamole


3 ripe avocados mashed (use a fork)

½  lemons juiced

1 lime juiced

¼ cup coriander (cilantro) stems finely chopped

1 large tomato de-seeded and finely diced

1 small red onion finely diced

1/2 small red capsicum (pepper) finely diced

1 fresh chilli finely chopped (remove the seeds unless you want it super-hot)

¼ teaspoon smoked paprika

Salt and pepper to taste


Cut the avocados in half and remove the seeds, using a large spoon remove the flesh from the skin and place into a metal bowl. Mash the avocado with a fork, then add the lemon and lime juice, followed by the onion, capsicum, coriander stems, tomato, chili, paprika, salt and pepper to taste. Combine well and then scrape into your favourite bowl. Top with a fine sprinkle of paprika and coriander leaves; serve with vegetable crudités, seeded crackers or toasted flat bread. Dig in!

Smoked salmon, fresh crab or prawns with an extra squeeze of lime or lemon go wonderfully with this classic dip.  Or what about this, roast up some sweet potato chips to use as dippers into your gorgeous bowl of goodness and flavour.
